Wake up slow with these delicious pancakes.
This is a family-friendly recipe for those who take their time in the morning and enjoy a delicious warm breakfast. It’s the backcountry version of Sunday morning pancakes. The kids will be stoked with chocolate chips and dried apple and the whole family will feel energised for the day. These pancakes cook well on a nonstick pan without butter or oil.

Serves Two adults, two kids
1½ cups white spelt flour
1 tbsp baking powder
¼ cup caster sugar
2 tsp egg replacer
2 tbsp milk powder
1 tsp cinnamon
¼ cup dried apple, chopped
¼ cup chocolate chips or buttons
2 cups water
Add chocolate chips and dried apple to a small ziplock bag. Add the remaining dry ingredients to a large ziplock bag, then seal and shake to combine. When you are ready to cook, add water to the large ziplock bag, seal and shake to combine well.
Heat a frying pan over your cooker, then pour in enough batter for 1 pancake. Tilt the frying pan so the batter is even, then sprinkle batter with a handful of dried apple and chocolate chips.
Once the batter has heaps of bubbles, flip and cook until golden. Repeat with remaining batter. Top with foraged blackberries (optional).
